The author of “Bisra Chulha Bisrey Swad- Awadh Key Lok Vyanjan,” Urmila Singh has, over the years, closely observed the traditional folk foods prevalent across Awadh. She has spent a good part of the last few decades visiting the remotest regions of the province, understanding the concepts surrounding folk cuisines, and how seasonal and traditional foods cure the body and mind. Eventually, she documented these recipes and compiled them into a book, ensuring that the generations to come benefit from her culinary experiences
